Red wine from Côtes de Meuse

Elegance above all

All winemakers are a little obsessed with Pinot Noir, because it is the most difficult grape variety to grow and make wine and is unforgiving of mistakes. our Pinot Noir parcel has lower fertility and a much higher clay component which gives the wines more depth and structure.

Our Pinot Noir is a light red wine. It is appreciated for its aromas of red fruits, flowers and spices which are accentuated by a long and creamy finish.

Pinot Noir has a thin, delicate skin, making it one of the most difficult grape varieties to grow.

Being a thin-skinned grape makes it susceptible, strong sunlight could burn the fruit, in very humid conditions its natural barrier and protection is very weak, making pinot noir very susceptible to fungal attack, especially downy mildew when the grapes are still green and botrytis after release and accumulation of sugar in the berries.

For all these reasons Pinot Noir vines tend to prefer more intermediate climates with long, cool growing seasons, and this is why Pinot Noir finds its place in our region, Lorraine.

Winemaking

The grapes are sorted in the vineyard, only the very ripe grapes are picked by hand early in the morning to enter the cellar cold. Part of the grapes are destemmed and when the stems are ripe, we put at least 10% of the whole bunch into fermentation to obtain a higher degree of tannins and better color stabilization.

Alcoholic fermentation takes place in a large diameter stainless steel tank to maximize the contact surface between the juice and the skins of the grapes and facilitate the extraction of color, aromatic compounds and soft tannins from the skins.

During this time, only very gentle punching down is carried out in order to get the most out of the grape skins without any extraction of the seeds which will bring astringency and bitterness to the wine.

The wine is then transferred to 228 liter French oak barrels of different years for an aging period of at least 8 months. During this aging period the wine goes through malolactic fermentation which occurs naturally in the spring when cellar temperatures reach 18 to 20 degrees transforming the hard malic acid into a very pleasant and soft lactic acid which gives a rounded sensation in mouth.

Bottled unfined and with minimal filtration.

Tasting

Pinot Noir is a light red wine. It is appreciated for its aromas of red fruits, flowers and spices which are accentuated by a long and creamy finish.

 

A very versatile companion wine given its higher acidity and lower tannins. Pinot Noir goes particularly well with duck, chicken, pork and mushrooms.

Consume between 10° and 13°C

Aging potential: 4 to 5 years.
