White wine from Côtes de Meuse

Lightweight, Fruit-focused and Versatile

Gamay is a red grape variety primarily associated with the Beaujolais region of France. It is known for producing light to medium-bodied red wines, with crisp acidity and low tannins. it is a grape variety that needs a lot of sun, so here in Côte de Meuse it is very dependent on the year, in hot years it can be produced in red and in cold years it is used in the blend of gray wine .

Our Gamay comes from old vines planted in 1982, on clay soil which gives depth to this wine and preserves its fruity aromas.

This grape variety requires a lot of care. we therefore spend a lot of time in the vineyard to aerate the grapes and expose them to the sun, removing leaves around the grapes and keeping yields low to guarantee above all quality and to preserve the full aromatic expression and concentration of the grapes. fruit.

Winemaking

All of the fruit in this wine has been hand-picked, hand-sorted, and then destemmed to ensure that only the perfect Gamay berries make it to the vat. Gently transferred into small open stainless steel fermenters, Cold premaceration for 2 to 4 days, The grapes macerate for two weeks with daily punching down and pumping over, up to 10 days of maceration after fermentation.

After fermentation we delicately press the pomace grapes, with very low pressure to prevent aggressive tannins from influencing the wine. Free-run juice and press juice are combined.

 

Gamay grapes are naturally high in acidity, so we carry out malolactic fermentation. This gives the wine a creamier texture, reducing its acidity and resulting in a rounder wine.

Before bottling, the wine can be filtered to remove unwanted particles. Once ready, Gamay is bottled and can be ready to enjoy immediately or aged in bottle for 3 - 4 years.

Tasting

Gamay has pronounced aromas of small red fruits, such as cherry and raspberry. light floral aromas, such as violet and iris, which add a layer of complexity to the wine.

A characteristic sensation of juiciness in the aromas, giving the impression of freshly crushed fruit.

The dominant red berry character continues on the palate, with flavors of red cherry, raspberry and cranberry undertones with a touch of spice, such as white pepper and cinnamon.

The combination of vibrant acidity and fruitiness gives the wine a feeling of freshness and elegance. the tannins are soft and silky, contributing to a pleasant texture in the mouth.

With a clean, crisp finish, this wine is exceptionally pleasant. Red fruit flavors can linger on the palate, leaving a pleasant and lingering fruity aftertaste.

Gamay is a versatile wine that pairs well with a variety of dishes due to its freshness, fruitiness and acidity. go perfectly with a selection of cold meats, such as sausage, dry-cured ham and terrines.

Gamay goes well with poultry dishes, whether roast chicken, duck or turkey. Its lightness and liveliness harmoniously complement the texture of the meat.

pair well with mushroom dishes, such as wild mushroom risottos or pasta with mushroom sauce.

The liveliness of Gamay makes it an excellent choice with spicy dishes, such as Mexican or Indian cuisine. It can soften the heat of spices while providing a pleasant freshness.

Gamay is often enjoyed slightly chilled, which accentuates its fruity and fresh character.
